The nutrient that is not really about food
Every other nutrient on this site is a question about what you eat. Vitamin D is a question about where you were between about ten in the morning and three in the afternoon. Your skin makes most of it, using UVB from sunlight, and food contributes a modest amount by comparison.
That single fact reorganises everything. It means a careful eater with an indoor job can be worse placed than someone who eats badly but walks to work in the sun. It also means the fix, when there is one, is often about the shape of your day rather than the contents of your fridge.

What the research on indoor workers actually found
A systematic review published in BMC Public Health in 2017 pulled together studies comparing vitamin D status across occupations. The pattern it found was consistent rather than surprising: indoor workers, including office staff, healthcare workers and shift workers, tended to have lower vitamin D levels than outdoor workers doing comparable jobs in the same regions.
Read that carefully, because it is a statement about groups, not about you. A review like this tells you which direction to look. It cannot tell you your own level, and no article can. That still requires a blood test that a clinician orders and interprets.

The window does nothing, and this is the reason
A bright desk by a big window feels like sunlight, and for the purposes of vitamin D it is not. Ordinary window glass blocks UVB, the specific wavelength band your skin needs to start the process. UVA passes through more readily, which is why you can still feel warmth and even get some skin ageing through glass while producing essentially no vitamin D.
Sunlight through glass is warmth without the wavelength that matters.
The same logic applies to a car commute, a covered walkway, and a very sunny living room. If there is glass between you and the sky, the vitamin D part is not happening.

How much sun is not a number anyone can give you
You will see confident figures online, usually something like fifteen minutes, three times a week. Treat them as folklore. How much vitamin D your skin makes in a given stretch of sun depends on all of the following at once:
- Latitude and season, which set how much UVB reaches the ground at all
- Time of day, since UVB drops off sharply in the early morning and late afternoon
- Skin tone, because melanin reduces UVB penetration
- How much skin is uncovered, and for how long
- Cloud cover, air pollution, and shade
- Age, since the skin's capacity to make vitamin D declines over time
Stack six variables and any single recommendation is wrong for most of the people reading it. This is also why sun exposure advice has to be balanced against skin cancer risk, and why nobody sensible tells strangers on the internet to sunbathe.

The food side, which is smaller than people assume
Few foods carry meaningful vitamin D naturally, and the ones that do are mostly oily fish. Published figures from NIH ODS give a sense of the range:
- Rainbow trout, cooked, 3 oz: about 645 IU
- Sockeye salmon, cooked, 3 oz: about 570 IU
- White mushrooms exposed to UV, half a cup: about 366 IU
- Fortified milk, 1 cup: about 120 IU
- One large egg, scrambled (the D is in the yolk): about 44 IU
The reference intake for most adults is around 600 IU a day, rising to 800 IU past 70. Look at the egg line again and you can see the problem: reaching that from food alone, without oily fish or fortified products, takes real effort. That is precisely why fortification exists, and why sunlight normally does the heavy lifting.

Why this one deserves a professional rather than a guess
Vitamin D is fat-soluble, which means the body stores it rather than flushing the excess. That changes the risk profile compared with something water-soluble: taking a lot for a long time is not harmless, and it is possible to overdo it in a way you cannot with, say, vitamin C.
It is also one of the few nutrients where testing is routine and genuinely informative. If your work and your commute have kept you indoors for years, that is a concrete thing to raise at your next appointment, and it takes one sentence: I am indoors nearly all day, should we check my vitamin D.
Everything else in this article is background. That sentence is the useful part.
